The Flamingo is my default, but I have stayed in about 10 hotels in Vegas over the years, three of which have since been demolished! (Bourbon St, Boardwalk, Stardust).

In'n'Out has a fine reputation. I should have driven to it the week that I had a car. You can't reach it from the strip by foot (well, not easily).
